Celiac disease is rough on the diet. No flour, starch, wheat or any other products made with sauce, thickeners..you name it. My wife has been dealing with this for about 6 months now and just recently I met someone who was opening a totally gluten free bakery called The Health Nut Bakery.
They dropped off some products and we couldn't beleive how great they tasted. They use almond flour to bake them which is unlike most of the GF products in that it has protein and "sticking power" - oh and it doesn't taste like cardboard either.
Their products are great - they sell gluten free muffins and the flour to bake them with. They are also adding cookies and bread in the near future.
